Icelandic Fish
Wolffish With Olives
Serves 2
What You Need
2 x 170 gram portions of GO WILD Icelandic Wolffish
75 mL Olive Oil
75 grams good Green or Black Olives cut in half
1 Lemon juiced
20 grams fresh chopped Oregano
7 grams Salt and Pepper
Preparation
- Place the olive oil in the pan and heat on medium.
- Season the wolffish with the salt and pepper.
- Place the fish in the pan and cook for approximately 3-5 minutes each side getting a nice golden brown crust.
- When fish is almost done add in the olives, lemon juice and oregano and cook for about 2 minutes. Remove from heat.
- Serve on plate with roasted garlic pasta and charred cherry tomatoes.
