Wolffish With Olives

Serves 2

What You Need

2 x 170 gram portions of GO WILD Icelandic Wolffish

75 mL Olive Oil

75 grams good Green or Black Olives cut in half

1 Lemon juiced

20 grams fresh chopped Oregano

7 grams Salt and Pepper

Preparation

  1. Place the olive oil in the pan and heat on medium.
  2. Season the wolffish with the salt and pepper.
  3. Place the fish in the pan and cook for approximately 3-5 minutes each side getting a nice golden brown crust.
  4. When fish is almost done add in the olives, lemon juice and oregano and cook for about 2 minutes. Remove from heat.
  5. Serve on plate with roasted garlic pasta and charred cherry tomatoes.
