Icelandic Fish

Maple Glazed Arctic Charr

Serves 2

What You Need

2 x 170 gram portions of GO WILD Icelandic Arctic Charr

75 grams Butter

15 mL Olive Oil

25 mL Orange Juice

50 mL Maple Syrup

7 grams Salt and Pepper

Preparation

  1. Place the oil and butter in the pan on medium heat.
  2. Season the charr with the salt and pepper.
  3. Place the charr flesh side down in the pan and cook to get a nice brown crust, about 2-3 minutes. Then flip over and cook on the skin side until golden brown and crispy, about 6 minutes.
  4. When fish is cooked remove from pan and set aside on warm plate.
  5. Add the maple syrup and orange juice to the pan and bring to a boil with the butter oil mix from cooking the fish. Let it thicken for about 1 minute and then remove from heat.
  6. Pour sauce over charr, serve with buttered rice and tossed baby greens.
