Haddock With Panko And Parmesan Crust

Serves 2

What You Need

2 x 170 gram portions of GO WILD Icelandic Haddock

1 Egg beaten

50 mL Olive Oil

100 grams good Panko Breadcrumbs

50 grams Parmesan Cheese grated

15 grams chopped Parsley

7 grams Salt and Pepper

Preparation

  1. Mix the salt and pepper, cheese, breadcrumbs and parsley together in a bowl.
  2. Dip one side of the haddock in the egg then dip it in the cheese panko mixture to get a nice coating.
  3. Place oil in the pan on medium heat and add the haddock, coated side down in the pan and cook to get a nice brown crust, about 3-5 minutes, then flip over and cook on the other side until golden brown, about 5 minutes.
  4. When fish is cooked remove from pan and set aside on warm plate.
  5. Serve on plate with roasted sweet potato wedges and broccolini spears.
