Wild Sockeye Salmon is easily recognized by its vibrant red meat colour and has a deep rich flavour.Sockeye Salmon is considered one of the premium species of
all wild caught salmon and is a source of omega-3 polyunsaturated fatty acids.

1 side of sockeye
3 sprigs fresh rosemary
2 small lemons (1 juiced and 1 sliced)
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
¼ teaspoon ground black pepper
2 cloves garlic – peeled and roughly chopped
2 oz butter

Place the sockeye on buttered tin foil. Brush the sockeye with the lemon juice and sprinkle with the olive oil, salt and pepper and chopped garlic. Place the rosemary sprigs on top of the sockeye and a slice of lemon on each piece. Seal foil tight. Place on bbq at 400°F for approx. 15 mins till the fish is cooked. You can bbq less if you like your salmon medium. Open foil and serve pouring cooking liquid from the foil over the salmon.
