Icelandic Fish
Zesty Lemon Cod
Serves 2
What You Need
2 x 170 gram portions of GO WILD Icelandic Cod
1 Lemon juiced and zest removed and set aside
100 grams Butter
30 grams Italian Parsley chopped
50 mL Olive Oil
7 grams of Salt and Pepper
Preparation
- Place the olive oil in the pan on medium heat.
- Season the cod with the salt and pepper.
- Place fish in pan and sear for about 4 minutes until fish starts to turn brown.
- Turn fish over and repeat the searing process.
- When fish is cooked remove from pan and set aside on warm plate.
- Return pan to medium heat, add the butter and melt, then add the lemon juice.
- Remove from heat, add the parsley and lemon zest, mix well.
- Pour sauce over the fish and serve with tossed mixed greens.
