Icelandic Fish

Zesty Lemon Cod

Serves 2

What You Need

2 x 170 gram portions of GO WILD Icelandic Cod

1 Lemon juiced and zest removed and set aside

100 grams Butter

30 grams Italian Parsley chopped

50 mL Olive Oil

7 grams of Salt and Pepper

Preparation

  1. Place the olive oil in the pan on medium heat.
  2. Season the cod with the salt and pepper.
  3. Place fish in pan and sear for about 4 minutes until fish starts to turn brown.
  4. Turn fish over and repeat the searing process.
  5. When fish is cooked remove from pan and set aside on warm plate.
  6. Return pan to medium heat, add the butter and melt, then add the lemon juice.
  7. Remove from heat, add the parsley and lemon zest, mix well.
  8. Pour sauce over the fish and serve with tossed mixed greens.
