Wolffish En Papillote Recipe

Serves 2

What You Need

2 x 170 gram portions of GO WILD Icelandic Wolffish

50 mL Olive Oil

200 grams Mixed Vegetables cut and blanched (Carrot, Mixed Peppers, Onions, Green Beans)

1 Lemon cut in slices

2 10×10 pieces Parchment Paper

7 grams Salt and Pepper

Preparation

  1. Place the vegetables and lemon in bowl and toss with the olive oil.
  2. Season the wolffish with the salt and pepper.
  3. Place the 2 parchment papers on the table and place ½ vegetables in each.
  4. Place fish on top of vegetables.
  5. Fold in paper to form a square that totally seals in the fish and vegetables.
  6. Place in 375°F oven for approximately 15-18 minutes until fish is fully cooked.
  7. Serve on plate and open at the table as you eat to get all the aromas.
